In addition to running with Lauretta, here are a few other favorite parts of my long holiday weekend....
Coloring eggs at my parents' house....a Good Friday tradition.
A festive Easter table full of chocolate and malted eggs, jellybeans and freshly cut tulips.
A restyled coffee table complete with my grandmother's vase and a candle to remember my recent trip to NYC.
I prepared a quiet Easter dinner for us as well as my parents. To start, I assembled a cheese platter using all of the cheeses bought at Zabars, an upper west side food emporium in NYC. Last weekend Fred and I went on a gourmet food shopping trip to the city...post to come soon!
The platter was filled with four cheeses: Parmigiano Reggiano, Gruyere, Saint Andre {a soft cheese similar to Brie}, and a smoked Gouda.
Pureed Celery Root and Carrots adapted from this recipe.
Paula Deen's Herbed Monkey Bread taken from here...
Along with an Apricot Pork tenderloin adapted from this recipe.
My daughter comes home tomorrow morning from the weekend at her dad's house, so we will be celebrating as a family with some basket opening and an egg hunt. But before she arrives back to the ranch, Lauretta will be here bright and early for a little workout on the track. That will actually be our first speedy session together ever!
How did you spend your holiday weekend? Hopefully the weather was better than ours!
