Loving Lately

In an otherwise uneventful week, my husband managed to "wow" me one night with his pretty arrangement of chips and salsa.  So much so, that I just had to take a photo of his creation for all to see.     



I have to give props to those who can give up dairy because cheese is quite possibly my favorite thing.  It is especially delicious straight from the cheese state itself, Wisconsin.  I've been loving this aged cheddar served simply with walnuts and dried cranberries.  


My birthday buddy at school brought in treats to celebrate my half birthday since my real one is in the summer.  She made another delicious recipe from Pinterest that's perfect for any chocolate lover {such as myself}: Oreo Bundt Cake with Chocolate Ganache...{the photo doesn't do the cake justice}...


Finally, I am loving that it's Friday.  This was the first 5-day week we've had in a while and I'm exhausted.  My family has a few things on the agenda this weekend such as a trip to my in-laws on Sunday.  It snowed the day we initially planned the visit over the holiday break so we're making it up now.  I'm also looking forward to a few good runs and some relaxing time at home.

    What You Need:

    For the quinoa mixture:
    1/4 cup safflower or olive oil
    1/2 cup onion, diced
    3 garlic cloves, minced
    2 tablespoons dry sage
    1 tablespoon dry thyme
    1 teaspoon oregano leaves
    1 teaspoon dry red pepper flakes
    1 tablespoon chili powder
    1 tablespoon ground cumin
    2 cups cooked quinoa
    2 tablespoons soy sauce
    2 tablespoons Worcestershire
    Salt, to taste

    For the nachos:
    1 bag tortilla chips of choice
    Quiona mixture
    2 to 3 scallions, chopped
    1 4-ounce can black olives, sliced
    4 oz. diced Roma tomatoes
    1 jar chunky salsa

    For the quinoa mixture, in a large skillet over medium-high heat, heat oil until hot. Add onion, garlic, sage, thyme, oregano, peppers, chili powder, and cumin and mix well. Sauté for 3 to 5 minutes.

    Add quinoa, soy sauce, and Worcestershire and mix well. Reduce heat to medium-low and cook for 5 to 7 minutes. Add salt to taste.

    Assemble nachos, make a bed of tortilla chips, cover with warm quinoa filling, and top with scallions, olives, diced tomatoes and salsa. We even add guac sometimes! Serve hot.

    This recipe sounds amazing!!! Quinoa is one of my favorites....I'm thinking this may be a good Super Bowl Sunday appetizer! :) Have a great weekend!
