An Easy Twist on an Old Favorite

Morning! 

I have a twist on an old favorite, tomato soup and grilled cheese...courtesy of my friend, Ina.  Monday night, we had homemade tomato soup with grilled cheese croutons.  The recipe was taken from here and is very simple.  I made it on Sunday and doubled the recipe so I would have enough for a few days, plus lunches.  For the croutons, I made a few simple grilled cheese sandwiches with Cooper sharp cheese, cut them into cubes, and dropped them on top of the ladled soup.  


Here are a few suggestions/modifications:  

--I would definitely suggest using a crusty bread so the croutons will hold up for a longer period of time while soaking in the soup.

-- If you have kids that are picky with onions, puree the soup to create a smoother texture.

-- To make this soup more figure friendly, skip the cream {or just add less}. 

-- I would strongly suggest using canned, crushed San Marzano tomatoes.  They just taste better!    

I love to find new ways to mix up old favorites this one was rated top-notch among my family. 

Running…I did 5 miles on Monday morning and yesterday I had to take off.  When I woke up, it was POURING at 6 am and still dark.  After school, it was still pouring with tornado warnings and Fred put his foot down and made me stay in.  This morning, I am about to engage in 5-6 miles before school.  

And for tonight...I am so excited to get reacquainted with my girlfriends for a girls' night out.  We are trying Molinari's, a new Italian restaurant on the Southside of Bethlehem.  Can't wait!

  1. My husband's favorite meal is grilled cheese & tomato soup! Even when we go out for dinner, he will order it if he sees it on the menu!
    I think it was smart to take the day off running in the extreme weather. Safety first!

  2. What a co-inky-dink. I happened to try this recipe on Monday myself - it was DEEEEEEElicious! Personally, I liked the softer grilled cheese just dipped in the soup.

    1. Hi Fran! Thanks for the comment. I actually didn't get to make it due to my husband's schedule...but my three girlfriends went without me and had a blast! They are still craving more of the arugula salad. I will definitely be heading over to your place soon.
