Hello!
There's one more day until the workweek is complete and I am looking forward to a few things on my weekend agenda.
First, on Friday night my colleagues and I are volunteering at Safe Harbor, a local homeless shelter. We are slated to cook and serve the spaghetti and marinara sauce that was donated by our fourth graders and their families. In addition to the food, we have oodles of coffee donations to take as well. I have never cooked or served food in a shelter before and I am looking forward to helping in my community. `
Second, Fred and I will be heading out to the first
weekend of March Madness, a multiple-weekend extravaganza in March that
involves all of the wineries on the Lehigh Valley Wine Trail. Each weekend, the wineries provide a different wine and food
pairing to those who purchased the passport. I plan our voyages based on "who" is serving "what" on "which" weekend...and we always have a blast!
And finally, I just love the weekends because they give me
the time I need to relax, recover, and regroup after a long, jam-packed
week.
Running - Last night I did my weekly progression run for a total of
5 miles. The first 2 ½ miles were
covered in 18:58 which was approximately 7:35 pace per mile. I finished the second 2 ½ miles in
16:42 at approximately 6:41 pace which all = 35:40 total time. Overall, I felt pretty good. It was a dreary and rainy evening, but
in my opinion, a perfect running temperature.
Dinner - After my run, my daughter and I made our own pizza using
whole-wheat dough from Wegman’s, along with pre-packaged sauce and
cheese.
She decided that she wanted to do a nice and simple cheese
pizza along with a salad and I thought
that sounded perfect.
I rolled out the dough on a cookie sheet. Hint for next time: precook the crust a
little bit prior to adding the sauce and cheese. This will provide you a crispier crust.
Add the sauce and cheese, plus a little dried basil and
bake at 375 degrees for 15 to 20 minutes. In the meantime, I prepared a salad...Southwest Caesar for two.
Our pizza came out with a HUGE bubble...of course, my daughter wanted that piece.
In a matter of minutes, delicious pizza was at our dinner
table.
Later today, I am planning on a nine-mile long run with
Lauretta. Hope the weather holds
out!
